Results of the application of a food intervention program with amaranth in patients with diabetes mellitus 2 from Sahuayo, Michoacán, Mexico

Diabetes mellitus 2 (DM 2) represents a public health problem in Mexico, considered by the Ministry of Health as an epidemic since 2016, currently represents the leading cause of death in the country.
Recognizing that food is a fundamental pillar in the control of the disease, the food intervention Program "Amaranth and Diabetes" was carried out in a group of patients with this pathology residing in the municipality of Sahuayo, Michoacán.
The work was part of the follow-up of a previous research in another municipality in the region (Cojumatlán de Régules, Mich.) which allowed to identify the positive effect of this cereal on the health and nutrition of patients with DM 2.
Among the results obtained in this program, the decrease in glucose, the increase in high-density lipoproteins (HDL) and the decrease in atherogenic irrigation stand out, data that indicate that amaranth can be a food that contributes to the health and nutrition of the patient with DM 2.
Undoubtedly, Covid 19 has shown that DM 2 is one of the first three comorbidities that lead to severe complications of infection, so amaranth constitutes a viable food alternative for the management and control of the patient with this pathology hence the importance of presenting these findings emerged from Nutritional Anthropology.
