Abstract
The present work is the result of the Experimental Archeology practice, carried out in the Arqueozoology course within the study program of the Academic Anthropology Unit. This practice aims to identify and analyze cutting and fracture tracks as well as the processes of treatment in the faunal bone elements. It also helps the anatomical identification of the bones that make up the animal skeleton, in this case the skeleton of a Rooster (Gallus Gallus Domesticus).
For the analysis, it was carried out with the help of different manuals specialized in the subject of skin and treatment of faunal bone elements and Archeozoology, such as the manual by Claire Lowel (2017) "How to Clean Animal Bones So You May Proudly Display Them in Your Home" and that of Louis Chaix and Patrice Méniel (2005) "Manual of Archaeozoology".
Within this work we will be able to find different charts, as well as a photographic guide of how the cooking, cutting and fracturing process was carried out.
